This is the best vegan brownies you'll ever eat! I saw this recipe on Rosanna Pansino's channel and had to try it! They are fudgy in the middle, crispy on top... everything you want in a brownie. Vegan or non vegan, you'll love this recipe!
Ingredients
1 cup vegetable oil
1 cup maple syrup
1/2 cup soy milk
1 tbsp vanilla
2 cups of flour
1 cup cocoa
1 1/2 cups sugar
2 tbsp baking powder
1/2 tsp salt
1/2 cup chocolate chips (vegan)
Method
Preheat the oven to moderate temperature (180C/350F).
Prepare a baking dish by lightly coating with butter or oil and line with parchment paper.
In a large bowl, whisk together all of the dry ingredients - flour, cocoa, sugar, baking powder and salt.
In a medium bowl, mix together all of the wet ingredients - vegetable oil, maple syrup, soy milk and vanilla until well combined.
Add the dry ingredients into the wet ingredients and mix until no streaks remain.
Fold in the chocolate chips. Pour the batter into the prepared pan and spread evenly.
Bake for 30 - 35 minutes or until a skewer inserted into the centre comes out clean.
Let it cool in the pan, and then cut into squares for serving.
