Rustic Custard Tarts

Learn how to make rustic custard tarts with this quick and easy custard tart recipe.

These are like golden parcels of deliciousness. I adore this recipe for its simplicity and addictive flavour, all wrapped up in a flakey pastry outer.

Ingredients
filo pastry
1 egg
3 egg yolks
230g (1 cup) creme fraiche
100g (1/2 cup) caster sugar
60g maple syrup
1 tsp vanilla bean paste
1/4 tsp cinnamon
1/4 tsp nutmeg

Method
Preheat your oven to 200 degrees Celsius (390F).
Line 12 x muffin tins with filo pastry approximately 3 - 4 sheets thick and ensuring the pastry covers the bases and cups the inside of the tins.
Place the egg, yolks, creme fraiche, sugar, vanilla bean paste, cinnamon and nutmeg in a medium bowl and whisk until smooth.
Evenly divide the mixture between the tins and bake for 10 minutes or until the pastry has just browned. Drizzle the tarts with half the golden syrup and bake for another 2 - 5 minutes. Remove from the tins and place on a wire rack to cool. Refrigerate until cold.
Serve with remaining golden syrup.
