Raspberry Chia Jam

Hope you enjoy this simple raspberry chia jam recipe! It's made with all natural, vegan friendly ingredients and packed full of flavour.

You can swap out the raspberries for any fruit you like! The addition of the chia seeds adds a wealth of nutritional benefits such as fiber, protein, omega-3 fatty acids, calcium and magnesium. Enjoy this jam for breakfast on toast, or add it to your porridge / acai bowls.

Ingredients
250g frozen raspberries (or any berries, including mixed berries)
1 vanilla bean pod
10g (1 tbsp) chia seeds
10g (1 tbsp) water
juice of 1/2 small lemon
OPTIONAL: 1 -2 tbsp maple syrup or sweetener of choice, flavoured to taste

Method
In a saucepan, add your water and then raspberries. Simmer for about 10 minutes or until the berries are soft and can be easily broken down. Then add your vanilla bean (scraping out the beans on the inside of the pod first), chia seeds, and lemon juice. Add maple syrup and flavour to your preferred taste. Stir though and continue to simmer on a low heat for another 7-10 minutes. Cool and transfer to a jar.
