It's a wonderful time of the year when you can enjoy festive feasts! Learn how to make parmesan roasted potatoes with cranberries and herbs - I like to call them Christmas potatoes! It's the perfect roast potato recipe for Christmas / Thanksgiving and makes a beautiful side dish or accompaniment to your feast!
1kg washed potatoes
1/4 cup (25g) grated parmesan cheese
1/4 cup (35g) dried cranberries
1/4 cup (25g) olive oil
6 sprigs of rosemary & thyme
Salt and pepper
Turn on oven to moderate temperature (180C/350F).
Chop potatoes into halves or quarters and then steam for 5 minutes.
Meanwhile, in a small bowl with the cranberries, pour over boiling water until enough covers the cranberries. Allow them to steep for 10 minutes and then strain.
Turn the potatoes onto a baking tray and then drizzle and toss with the olive oil. Bake for 30 minutes.
Add fresh herbs, parmesan and cranberries and bake for another 10 - 15 minutes or until golden and crispy. Enjoy as a delicious side to your festive feast!
