Lamingtons

It's coming up to Australia day here in Aus, and I thought what better way to celebrate than to make a delicious batch of homemade lamingtons!! It's hard not to love such a classic recipe with a beautiful vanilla sponge, dunked in chocolate and then coated in coconut!

Vanilla Sponge Ingredients

125g unsalted butter
1 cup (220g) caster sugar
1 tsp vanilla extract
3 eggs
1 3/4 cups (260g) self raising flour (OR substitute with all purpose flour + 3.5 tsp baking powder)
1/2 cup (125ml) milk

Chocolate Icing Ingredients

4 cups (480g) icing sugar
1/3 cup (22g) cocoa powder
1 tbsp (15g) unsalted butter
140ml (1/2 cup) boiling water

Coconut Coating Ingredients

3-4 cups (250g) desiccated coconut

Method

Preheat oven to 180 degrees Celsius (350F) and then line with baking paper or grease a square or rectangle baking tin.
In a large bowl, beat your sugar, butter and vanilla with an electric mixer until light and fluffy (about 1 - 2 minutes). Add eggs one at a time, beating well after each so that the batter is nice and smooth. Next, with a sieve add half the flour, then fold to combine. Then add half the milk and fold to combine. Repeat with the remaining flour and milk.
Pour the batter into the prepared pan and bake for approximately 20 - 25 minutes or until a skewer comes out clean. Once cooked, allow the cake to cool completely. Cut the cake into squares or rectangles and trim the edges. You can then wrap in in foil and freeze, or continue with the recipe.
