Let's kick off the new year on a healthy note with this delicious chia pudding recipe! It's super simple to make and can be stored for up to a week so you can make in advance and enjoy on the go! The recipe is vegan friendly too so no body has miss out on a delicious, satisfying and energising breakfast or snack.
1 cup plant based milk
1/4 cup chia seeds
2 tsp maple syrup or sweetener of your choice
1 tsp vanilla extract / essence
Optional - muesli, granola, fresh fruit etc
In a bowl or jar, combine your maple syrup and vanilla essence with your plant based milk. Then add in the chia seeds and stir well. Allow to chill in the fridge for 10-20 minutes and then stir again otherwise the chia seeds will all sink to the bottom.
Allow to chill overnight. Top with fresh fruit, muesli or granola of your choice. Enjoy!
NOTE: Chia puddings can be stored in the fridge for up to 7 days and make a great snack or breakfast on the go.
