Flourless Chocolate Brownies

Today we're making one of the most loved baked goods in the world - the chocolate brownie! And it's incredibly delicious with that chewy top and ooey gooey fudgy chocolate centre. Did I mention this recipe is also gluten free?! Get this brownie in your life ASAP! 

Ingredients

600g dark chocolate chips
600g unsalted butter
20g vanilla
8 eggs
400g almond meal
530g white sugar

Method

Preheat oven to 180 degrees Celsius.
Line a large rectangle or square baking dish with parchment paper.
Melt the chocolate and butter together in the microwave.
In a large bowl, beat the eggs and sugar and vanilla until combined.
Add the ground almonds and whisk until a smooth consistency forms.
Pour in the melted butter and chocolate mixture, and stir/fold until well combined and evenly dispersed.
Bake for about 50 - 60 minutes until set.
Allow to cool for about 10 - 15 minutes. The mixture will appear gooey, put in the fridge to completely set. Drizzle with melted chocolate or icing sugar, and then cut into bite sized pieces.

Recipe makes 1 large slab.
