Pecan Pie

 Recipe makes 2 x regular sized pies or 1 x extra large slab

Ingredients

360g natural pecans (non roasted)
240g light corn syrup
125g honey
125g maple syrup
85g unsalted butter
4 eggs
22g bourbon
5g salt
4g vanilla essence
1 tsp orange zest
1/4 tsp cinnamon
1/4 tsp all spice

2 x Pie shell/s or flan/s - you can purchase from frozen in the super market or make shortcrust pastry by hand.

Method
Make pie shell/base if required, or remove from frozen.
Preheat oven to 180 degrees Celsius (350F).
In a large bowl, whisk together the eggs. Then proceed to add all other ingredients to the bowl, except the pecans and continue to whisk to combine. Now add the pecans and stir all ingredients. Pour mixture into unbaked pie shell/s and then place into the oven. Bake until the centre is just set - approximately 25 minutes, rotate and then continue to cook for another 15 minutes (cook time based off 2 x regular sized pies. May be longer for a large slab or less for minis). Set aside to cool. To serve, drizzle with melted chocolate or finish with whipped cream.
