Impossible Quiche

You are going to LOVE this quick and easy quiche recipe with no pastry / pie crust! The reason it doesn't require a base is because the flour that is added to the mixture before baking separates and sinks to the bottom to form a light crust... magic! This quiche is filled with ham, cheese and spinach - and is oh so delicious! Makes for a great lunch / dinner option and great for lunchboxes too.

Ingredients

4 eggs
1 1/4 cups milk
1/4 cup thickened cream
120g ham, chopped
1/2 brown onion, chopped or grated
1 1/2 cups grated cheese
3/4 cup fresh spinach, chopped
1/3 cup self-raising flour
1 tsp mixed Italian herbs
+ salt and pepper to taste
parmesan cheese to sprinkle on top

Method

Turn on oven to moderate temperature (180C/350F).
Prepare a quiche or baking dish by lightly coating with butter or oil.
In a medium bowl combine the ham, onion, cheese, spinach, flour, mixed herbs and mix to combine. Then turn mixture into the baking dish.
In the same (now empty) bowl, whisk your milk, cream, and eggs and then pour over the ham and cheese mixture. Bake for about 30 - 40 minutes or until puffed and golden.
When it’s time to bring out of the oven, sprinkle over parmesan cheese and allow for it to melt while the quiche slightly cools. Serve warm or cold.
