Learn how to make berry, chia and coconut slice with this delicious recipe that is bursting with flavour! A lovely morning slice or a healthier dessert alternative. Best enjoyed warm out of the oven.
Slice Base
3 tbsp maple syrup
1 cup rolled oats
1 cup almond meal
3 tbsp coconut oil
Berry Jam Filling
3 cups fozen mixed berries
3 tbsp maple syrup
2 tbsp chia seeds
1 tsp vanilla bean paste
Coconut Topping
1 cup desiccated coconut
2 free range eggs
1/2 cup white sugar
1 cup rolled oats
Method
To start, combine all the Berry Jam Filling ingredients into a saucepan and bring to the boil. Reduce to a medium heat, stirring the mixture frequently for approximately 15 minutes or until thick. Transfer to a bowl and place in the freezer until cool.
Preheat oven to 180 degrees Celsius. Combine the Slice Base ingredients in a food processor and blend until the mixture forms bread crumbs or similar. Press the mixture into a lined slice tin and bake for approximately 10 minutes or until golden brown. Remove from the oven and spread the Berry Jam Filling evenly over the base.
