Learn how to make peanut butter cups from scratch with this DIY recipe just like Reece's! It tastes just like the real thing, only more delicious because it's homemade! Did I mention these are vegan too? This is a super quick and easy vegan dessert you can whip up in no time at all.
Ingredients
1/2 cup peanut butter
1/4 cup powdered sugar / icing sugar
480g dark chocolate chips
Optional rock salt and chopped peanuts for the topping
Method
Line approximately 12 cupcake tins with pattie papers.
Melt your chocolate in the microwave, being careful not to burn the chocolate.
Add approximately 1 tbsp of chocolate to the cupcake liners, or just enough to fully cover the bases. Refrigerate or freeze until the chocolate has set.
Meanwhile, in a bowl combine the peanut butter and powdered sugar. Stir until well combined. It will form a dough like consistency. Spoon a teaspoon of the peanut butter dough onto the chocolate bases and press down slightly to create a disc that is just smaller than the chocolate base (so that there is enough room for more chocolate to go around the edges).
Now finish by pouring more chocolate over the top of the peanut butter so that it goes around the sides and covers the top. Repeat until you run out of chocolate and peanut butter dough. If you’re adding rock salt and/or peanuts to the top, now is the time to sprinkle it over.
Place in the fridge or freezer to set. Once the chocolate has solidified, you can take the cups out of the moulds or trim the liners if you want to keep them protected. Store in an airtight container in the fridge.
