250g all purpose flour
120g butter (unsalted)
1 egg yolk
Pinch of salt
Pinch of sugar
Place flour on bench top and make a well.
Add egg yolk and water, followed by pinch of salt and sugar and then mix together the wet ingredients with a fork or fingers. Don’t incorporate the flour yet.
Cut the butter into small pieces and place in the well.
Sprinkle the flour over the mixture and then squeeze into your hands. Continue to sprinkle and squeeze until all combined and the dough starts to form.
Roll the dough into a disc and cover with plastic wrap for at least 2 hours before use. Leave the dough at room temperature for approximately 30 minutes before use, or until workable.
