Today we're making the most incredible Upside Down Peach & Bourbon Skillet Cake! It is soft, buttery and absolutely MELT IN YOUR MOUTH!
It's nice and simple to make, yet beautifully impressive.
The cake base is light and fluffy, while the peaches are caramelised on top with an irresistibly chewy rim.
Serve warm out of the oven with cream, custard or ice cream.

INGREDIENTS - PEACH TOPPING
2 cups sliced peeled fresh or frozen peaches, thawed
2 tablespoons bourbon
1/4 cup butter
1/2 cup packed brown sugar

INGREDIENTS - CAKE BASE
1/2 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 teaspoon vanilla extract
1 & 1/4 cups all-purpose flour
1 & 1/4 teaspoons baking powder
1/4 teaspoon salt
1/2 cup full fat milk
1/2 teaspoon ground nutmeg
