Ingredients

2 cups (260g) all purpose flour
1 1/2 cups (310g) sugar
2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/2 tsp salt
1 1/4 cups (310g) whole milk
2 tbsp (28g) unsalted butter, melted
2 tsp vanilla extract

Topping

8 tbsp (112g) unsalted butter, melted
1/2 cup (100g) white sugar
1 tsp ground cinnamon

Method

Preheat oven to 180 degrees Celsius (350F). Coat / spray doughnut pans well, with oil or butter. In a large bowl sift together the flour, sugar, baking powder, cinnamon, nutmeg and salt. In another small bowl or jug, whisk together the egg, milk, melted butter and vanilla. Combine the wet ingredients with the dry ingredients and mix until just combined. Spoon the batter into the doughnut baking pans, filling each one to approximately 3/4 full. Bake for 15-18 minutes or until a toothpick comes out clean. Allow to cool for 5 minutes, then tap the doughnuts onto a pan or platter.
For the topping, melt the butter. In a small bowl combine the sugar and cinnamon and whisk. Dip each doughnut in the butter first, and then in the cinnamon sugar either on one or both sides of the doughnut. Repeat and then enjoy.
